Apple Oatmeal Cookies



Ingredients:

  • 1 cup rolled oats

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar, packed

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup grated Michigan apple (about 1 medium-sized apple)

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/2 cup raisins or dried cranberries (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Prepare the Dry Ingredients: In a medium-sized bowl, whisk together the rolled oats, all-purpose flour, baking soda, ground cinnamon, and salt. Set aside.

  3. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until light and fluffy.

  4. Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.

  5. Incorporate Apples and Nuts: Stir in the grated Cripps Pink apple, and add the chopped nuts and raisins (if using). Mix until evenly distributed.

  6. Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.

  7. Form Cookies: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still slightly soft.

  9. Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
