Here's a simple and delicious recipe for The Apple Truck's Apple-Pumpkin Chutney:
2 large apples, peeled, cored, and diced
1 1/2 cups pumpkin, peeled and diced
1/2 cup raisins
1/2 cup brown sugar
1/4 cup apple cider vinegar
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground turmeric
1/4 teaspoon red pepper flakes (adjust to taste)
Salt and pepper to taste
In a medium-sized saucepan, combine the diced pumpkin, diced apple, raisins, brown sugar, apple cider vinegar, chopped onion, minced garlic, and grated ginger.
Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir to combine all the ingredients.
Add the ground cinnamon, ground nutmeg, ground cloves, ground turmeric, and red pepper flakes to the mixture. These spices will infuse the chutney with a warm and aromatic flavor.
Continue to simmer the mixture, stirring occasionally, until the pumpkin and apple are tender and the mixture has thickened. This should take about 20-25 minutes.
Taste the chutney and season with salt and pepper according to your preference. Adjust the sweetness and spiciness as needed.
Once the chutney has reached the desired consistency, remove the saucepan from the heat and allow it to cool.
Transfer the chutney to a clean, airtight container. Store it in the refrigerator for several hours or overnight before serving. This will allow the flavors to meld and develop.
Serve the Apple Pumpkin Chutney as a condiment with roasted meats, grilled poultry, cheese platters, or as a spread for sandwiches and wraps.
Enjoy the delightful combination of pumpkin, apple, and raisin with a perfect balance of sweetness, tanginess, and warmth.
Note: You can customize this chutney by adjusting the sweetness and spiciness levels to suit your taste. Feel free to experiment with the spices and ingredients to create your own unique variation.
