Here's a simple and delicious recipe for The Apple Truck's Apple-Pumpkin Chutney:

Ingredients:

  • 2 large apples, peeled, cored, and diced

  • 1 1/2 cups pumpkin, peeled and diced

  • 1/2 cup raisins

  • 1/2 cup brown sugar

  • 1/4 cup apple cider vinegar

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon ground turmeric

  • 1/4 teaspoon red pepper flakes (adjust to taste)

  • Salt and pepper to taste

Instructions:

  1. In a medium-sized saucepan, combine the diced pumpkin, diced apple, raisins, brown sugar, apple cider vinegar, chopped onion, minced garlic, and grated ginger.

  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir to combine all the ingredients.

  3. Add the ground cinnamon, ground nutmeg, ground cloves, ground turmeric, and red pepper flakes to the mixture. These spices will infuse the chutney with a warm and aromatic flavor.

  4. Continue to simmer the mixture, stirring occasionally, until the pumpkin and apple are tender and the mixture has thickened. This should take about 20-25 minutes.

  5. Taste the chutney and season with salt and pepper according to your preference. Adjust the sweetness and spiciness as needed.

  6. Once the chutney has reached the desired consistency, remove the saucepan from the heat and allow it to cool.
