Apple Soufflé Pancakes


Ingredients:


For the Pancakes:

  • 1 cup all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 cup buttermilk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups grated apples (about 2 medium apples)

  • Butter or oil for cooking

For the Apple Soufflé Topping:

  • 2 medium apples, peeled, cored, and thinly sliced

  • 2 tablespoons unsalted butter

  • 2 tablespoons brown sugar

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

  • 1/4 cup water

For Serving:

  • Maple syrup

  • Whipped cream

  • Chocolate sauce (optional)

Instructions:


1. Prepare the Apple Soufflé Topping

  • In a skillet over medium heat, melt the butter.

  • Add the sliced apples, brown sugar, ground cinnamon, and a pinch of salt.

  • Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes.

  • Add water to the skillet and cook for 2-3 minutes until the mixture thickens slightly. Remove from heat and set aside.

2. Prepare the Pancake Batter:

  • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

  • Whisk together the buttermilk, egg, and vanilla extract in a separate bowl.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

  • Gently fold in the grated apples into the pancake batter.

3. Cook the Pancakes:

  • Preheat a griddle or a non-stick skillet over medium-high heat and grease it with a small amount of butter or oil.

  • Pour 1/4 cup of pancake batter onto the griddle for each pancake.

  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

4. Assemble the Apple Soufflé Pancakes:

  • Place a stack of pancakes on a serving plate.

  • Spoon the prepared Apple Soufflé Topping over the pancakes.

5. Serve:

  • Drizzle with maple syrup, add a whipped cream dollop, and drizzle with chocolate sauce if desired.
