  • 2 cups fresh baby spinach leaves

  • 1 apple (such as Honeycrisp), thinly sliced

  • 1/4 cup dried cranberries

  • 1/4 cup walnuts, roughly chopped

For the Poppy Seed Dressing:

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • 1 teaspoon poppy seeds

  • Salt and pepper to taste

Instructions:

1. Prepare the Poppy Seed Dressing:
