Coconut Rice Pudding with Caramelized Apples


For the Coconut Rice Pudding:

  • 1 cup jasmine rice

  • 2 cups coconut milk

  • 1/4 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup sweetened shredded coconut

For the Caramelized Apples:

  • 2 Cripps Pink apples, cored and thinly sliced

  • 2 tablespoons unsalted butter

  • 2 tablespoons brown sugar

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

  • 1 tablespoon lemon juice

For Layering:

  • Honey or maple syrup (optional for drizzling)

  • Fresh mint leaves for garnish (optional)


For the Coconut Rice Pudding:

  1. Rinse the Rice: Rinse the jasmine rice under cold water until the water runs clear. Drain well.

  2. Cook the Rice: In a medium saucepan, combine the rinsed rice, coconut milk, sugar, and salt. Bring to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the mixture has thickened, stirring occasionally.

  3. Add Vanilla and Coconut: Stir in the vanilla extract and sweetened shredded coconut. Cook for 2-3 minutes until the coconut is well incorporated and the mixture is creamy.

  4. Cool and Chill: Remove from heat and let it cool slightly. Transfer the coconut rice pudding to a bowl and refrigerate for 1-2 hours to chill.

For the Caramelized Apples:

  1. Caramelize the Apples: Melt the butter in a skillet over medium heat. Add the sliced apples, brown sugar, ground cinnamon, and a pinch of salt. Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes.

  2. Add Lemon Juice: Stir in the lemon juice and cook for another minute. Remove from heat.

For Layering:

  1. Assemble a. Start by placing a layer of coconut rice pudding at the bottom of each serving glass or bowl. b. Add a layer of caramelized apples on top of the rice pudding. c. Repeat the layers.

  2. Garnish: a. Drizzle honey or maple syrup over the top for added sweetness (if desired). b. Garnish with fresh mint leaves for a pop of color and freshness.

  3. Serve: Serve the Coconut Rice Pudding with Caramelized Apples immediately and enjoy the delicious layers of flavors and textures.
