Extra Apples: Rustic Apple Harvest Bread


Ingredients:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups unpeeled cored and sliced apples (e.g., McIntosh or Jonathan)

  • 1 cup dried currants or raisins

  • 1/2 cup chopped walnuts or pecans (optional)

Glaze Ingredients:

  • 1 cup powdered sugar

  • 2-3 tablespoons milk

  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

  3. Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

  4. Add Eggs and Vanilla: Beat the eggs one at a time, then stir in the vanilla extract.

  5. Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the butter mixture until combined.

  6. Fold in Apples, Currants, and Nuts: Gently fold in the sliced apples, currants/raisins, and chopped nuts (if used).

  7. Transfer to Pan: Pour the batter into the prepared loaf pan, spreading it out evenly.

  8. Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few crumbs.

  9. Cool and Slice: Allow the bread to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. Once cooled, slice and enjoy!

Glaze Instructions:

  1. Prepare the Glaze: In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and reaches your desired drizzling consistency.

  2. Drizzle Over Bread: Once the Apple-Cherry Harvest Bread has cooled, drizzle the glaze over the top of the loaf.

  3. Let it Set: Allow the glaze to set for a few minutes before slicing and serving the deliciously glazed bread.
